I have decided not to buy anymore cold cereal. What started out as a weekend treat slowly spread into Monday, Tuesday etc. and we've been having it every morning for 6 months straight. It's so easy to pick up a box of Cheerios or Life (my favorite!), but by 9:30am everyone is hungry again.
I tried a few new breakfast recipes this weekend and thought I would share them with you.
I had some blueberries and strawberries left over from the 4th of July so I made some fruit cream cheese spread for bagels.
I took about 1/2 cup of fruit and chopped it up in the food processor. You could also just mash the fruit with a fork. I added some powdered sugar to taste (around 1-2 tablespoons), 8 oz. cream cheese and mixed it all together. I made a batch on Friday morning and today (Monday) it still tastes great.
The next thing I made was some Peach Sauce using the peaches I got at the Farmer's Market.
Peach Sauce
1/2 cup water
2 1/2 tablespoons sugar
1 1/2 tablespoons cornstarch
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 1/4 cup chopped fresh peaches
1/4 teaspoon almond extract
In a saucepan over medium heat, bring water, sugar, cornstarch, nutmeg and cinnamon to a boil. Boil for 1 minute then add the chopped peaches. Boil for 1 to 2 minutes and mash slightly with fork or potato masher. Remove from heat and stir in extract. You can add more spices and extract depending on how you like it. Serve warm.
We had ours over waffles, but would also be good on pancakes, stirred into yogurt or even over vanilla ice cream. Probably not for breakfast though. ;0)
So, what did you have for breakfast today?
We are just a cherios and coffee family. It seems no one here wants breakfest. My husband and I don't eat it. I just drink a few cups of coffee and he does nothing just leaves for work. My kids wake up and the first words the mutter are "coffee and George" (they love PBS's curious George. Later in the morning sometimes they ask for ceral and milk and then they will eat a bowl of cherios.

ReplyDeleteWell, I've been trying to eat a healthier/lighter breakfast lately in trying to lose the last few pounds. But, I get hungry and shaky if it's not the right thing. Toast doesn't stay with me at all. Anyway, today I had a mini cinnamon bagel (topped with a little light butter and a sprinkling of cinnamon sugar), a half of a banana, and a cup of orange juice. Yesterday I had the same mini bagel with a cup of vanilla yogurt topped with granola, strawberries, and sliced bananas and a cup of orange juice. That's been very filling for me and a pretty healthy start for my day. I'm working on getting my husband to eat breakfast....I don't know how he skips it! I've been reading that having breakfast is one of the best things to do when trying to lose weight (which he is trying to).

Oh, all that looks yummy. I usually have whole wheat toast with some sort of jam for breakfast. Cold cereal just doesn't do it for me, either. I know it is good for you but it wears off too soon. Oatmeal keeps me going longer when I eat it.

ReplyDeleteToday is waffle day at our house!! Other than cleaning up the waffle baker afterwards, it's really not a big deal to have waffles!
ReplyDeleteI know what you mean about the cold cereal bug spreading!! It can sure happen easily! We're back to just once a week again, and that sure helps stretch the food budget!
i hear what you're saying about cold cereals, but it works for me. i have a bowl of honey bunches of oats just about every morning. you would think i'd get sick of it, but i don't.

Ummmm...I had two little bitty donuts! lol I know, not very healthy and it's not something I eat often for breakfast but I couldn't resist this morning! lol Your cream cheese spread looks so yummy...a perfect way to use up leftover fruit!! xox

i put cottage cheese in smoothies and with yogurt for added protein as well. i have to put the cottage cheese in the blender with a little water to smooth it all out before i can eat it in anything. i hate those little bumps/curds. ick. i'll have a smoothie about 10 to tide me over to lunch.
pumpkin and i love breakfast. i usually make us something hot and fresh each morning. sometimes i'll make a batch of pancake or waffle batter from scratch and just use a little each day for a few easy days of breakfast. all this is making me hungry. maybe i'll go get that smoothie now...

I'm not a big breakfast eater. I usually just have a tall cup of French Roast coffee wtih my creamer and sugar. I wouldn't mind one of PEA's little donuts though!
These look great Kelli. And, um, I had a monster cookie for breakfast, Quintin had his normal oatmeal and Elle had cheerios. Some days we make eggs and toast - and I notice that it does tide them over much longer.

ReplyDeleteWell actually, I had nothing (as usual) and my kids had cheerios. After reading the posts, maybe I should change that? I have about 35 pounds to lose.
I like the idea of no cereal purely from a practical standpoint. Cold cereal is EXPENSIVE! I am just so LAZY, I can't imagine doing a 'spread' three meals a day, every day of the week.
Bad mama.
Maybe I will try? If it means losing weight. AND saving money.

I'm a cereal fiend, and would eat cereal every day, but I find lately that it makes me too hungry if I eat it plain for breakfast. I've been trying to cut my carbs for a few weeks, so have been having cheddar omelettes or hard boiled eggs for breakfast instead of the cereal.

Great ideas!!! Yes we buy a huge box of cherries but the boys only get it once a week or so. If they ate it daily we would go through almost two boxes a week! LOL Plus like you said it does nothing for filling their tummy; they are hungry two hours later! We eat a lot of oatmeal, eggs n ham, turkey bacon, bagels n cream cheese, fruit, waffles, whole wheat pancakes , banana bread, frittatas and crumpets! I love crumpets!!!!

We had church at our house yesterday. We always have a fellowship meal. Someone brought the most delicious broccoli salad. When they left, there was barely enough for one serving so they left it here. I had that and some of my homemade cottage cheese with a bit of pineapple.

Honestly? I had a bowl of Grapenuts. I hardly ever eat cereal, but I woke up at 4:30 to let the dogs out and I was STARVING so I had a bowl of cereal before I went back to bed.

What did I have for breakfast today? Coffee. Yup. That's it. We've been sleeping in, so we really don't eat much because lunch is usually right around the corner.
ReplyDeleteMy mid-year resolution is to start waking up early (which means going to bed at a decent hour) and actually cooking something healthy for the family.
We don't do much cold cereal at our house - but we are big muffin fans! I lay the ingredients out before I go to bed and cover everything with a tea towel and in the morning the muffins go in before I hit the shower and are done by the time I am ready for the day - 18 minutes! While they cool I make fruit cup, put out yogurt and cut up cheese or make eggs.

We eat bagels for a weekend treat - and I make fruit cream cheese with a bit of homemade jam - I never thought of fresh fruit! Thanks for the tip!
We also make light fluffy pancakes - from a homemade mix that has extra skim milk powder for protein so it sticks with us. We love omelets and scramblers - super quick and easy. We make waffles and double the batch for 'toaster waffles' in the freezer for the next few days! If we have a french loaf or italian bread we make french toast. We have fruit with every breakfast in some form or the other and balance the carbs with protein - eggs, cheese, bacon, etc..
Crock pot oatmeal is a wintertime favorte or baked oatmeal which tastes a lot like the topping for oatmeal crisp - which is also a breakfast food at our house! I'll also serve pumpkin pie for breakfast - but only if it is your birthday!
If we do have cereal it's Kashi and that really stays with you - honestly!

Hmmmm....let's see. I skipped breakfast. The boys had their standard waffles and pancakes (thank you, Eggo), and I don't think Beth was up in time to eat breakfast. =o) I'm glad there are healthier people in the world...I'll try to become one of them very soon. =o)

I love this idea, Kelli! I'm not sure it would fly with my family, though. I try to have at least 4 breakfasts a week that are hot and the others are toast or cereal. My girls are not very hungry in the mornings and get full pretty quickly. A piece of fruit around mid-morning - or, being honest here,- if it's a treat day (M,W, or Sa), they can have a cookie or the like.
ReplyDeleteI find that unless I have a pretty big breakfast, generally, no matter what it is, we get hungry around 10:30 or so. So we just do this snack or have an early lunch.

This morning I had whole wheat toast with butter. Hubby never eats breakfast, just drinks coffee. The girls had cereal, but will alternate with toast, oatmeal or bagels.

I tried to get away from cold cereal several years ago. It lasted for awhie, but then we added it back again. I do have to say that I make better choices now. Ceerios vs. Fruit Loops, etc. We also eat fruit, oatmeal, homemade granola, eggs, muffins, etc. I also buy cereal bars every once in a great while.
We stopped buying cereal about 6 years ago. Everyone ate too much and a box was EASILY gone by the breakfast the second day. Too expensive.
ReplyDeleteI started making lots of muffins and bagels and freezing them. I also make biscuits and freeze them, but I don't think they turn out so well. Mr. U LOVES them, though, so I continue to freeze them for him.
The ONLY problem about freezing muffins is that I always remember that they are in there and will often snack on them. Not good!!! Bagels, I can skip, but muffins? OOOHHHH YUUUMMM!!!

We used up some whole wheat hamburger buns from the fourth of July and made cinnamon toast on them and the girls and I had fresh peaches and strawberries with our toast. (Steve's went into his lunch box since he had cereal and coffee before us.) Of course, whith my sweet tooth, I dipped my strawberries in sugar when the girls weren't looking!

Looks yummy! We have cereal during the week as we enjoy it, but weekends are our "special" breakfasts. My husband has other things other than cereal throughout the week. Munchkin has the option of other things as well. Yet, munchkin and I usually have cereal. lol!
