Cappuccino Chocolate Muffins

Muffins
I have been making these muffins for many years and they are yummy for breakfast or anytime of day!

Cappuccino Chocolate Muffins

2 cups flour
1/2 cup sugar
1/4 cup brown sugar
2 teaspoons baking powder
3 teaspoons instant coffee powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 cup milk
1/2 cup butter, melted
1 egg
1 teaspoon vanilla extract
1 cup chocolate chips

Crumb topping:
4 tablespoons butter, melted
6 tablespoons all purpose flour
1/4 cup brown sugar
1/2 teaspoon ground cinnamon

Dry ingredients
1. In a large bowl, combine the flour, white and brown sugar, baking powder, coffee powder, salt and cinnamon.

Wet ingredients
2. In another bowl mix together milk, melted butter, egg and vanilla.

Chocolate chips
3. Add wet mixture to dry mixture and stir just until combined. Stir in chocolate chips.
4. Spoon batter into 12 greased or paper lined muffin cups.

Brown sugar
5. Make Crumb Topping: Combine the butter, flour, brown sugar and cinnamon and sprinkle evenly over unbaked muffins.

Muffins
6. Bake at 400F for 18-20 minutes or until a toothpick comes out clean. Let cool for 10 minutes before removing from pan.

Muffins
Hot out of the oven with a sweet crumb topping. Time to make a pot of coffee!

Muffin
There are lots of gooey chocolate chips inside. Let me know if you try them!

    Oh my goodness! I will have to try these yummy looking muffins. We lived in Italy for a little over 3 years and hubby still makes cappuccinos and espressos. :):):) Thanks for the recipe! :)

  15. Oh, these sound divine! I never have instant coffee though - I wonder if you can just use freshly ground? Have you every tried it that way?

  29. Hi. I was intrigued by the muffin recipe and decided to take the time and look at the rest of your site. I usually just check the current post and then scoot on over and check out some others. I am glad I spent a little more time tonight. I want to try your chicken pot pie recipe. Except I am going to use turkey. btw I sent your blog to my daughter in law who is homeschooling in Missouri. My poor family... I wish they were in Texas but oh well. I will let you know how the potpie turns out and think I'll make the muffins too. Blessings.Sherry

    Hi Kelli,
    Today I tried the cappuccino chocolate muffins. They are excellent. If I didn't know any better I would think they came from a good bakery. I made them in the extra big size muffin pan (it made six) and I added five more minutes onto the baking time. I shared one with my neighbor. She is my walking partner and I figured after I ate half of one that I would wear off the calories by walking, so it all came out even in the end. Thanks for a perfect muffin recipe that I will use again. We are going away for the weekend and I am taking them along to share with our host and hostess. I will be sure and tell them where I got the recipe.

    i'm completely in love with these muffins, though i find it necessary to add that i would add a splash more of milk (a little more than a cup) and a LARGE egg (at least 60-65g before cracking), which will ensure a very moist muffin that is soft. Also, i found that if i let the batter sit for a while as i make the topping the instant coffee would FINALLY melt (it took a while) and i could stir it in beautifully. Also, my chocolate chips sunk to the bottom (which i didn't like) so i didn't mix them into the batter, i just pressed them into the filled muffin cups and then sprinkled on the topping. also added a dash of cocoa powder to the top before baking and it added some oomph which was nice. :]

    other than that, these were fabulous and perfect! :D i really enjoy making them! :) thanks!
