I had Mother's Day in mind when I was looking through my recipes last week. I wanted one that was easy enough for Dad and the kids to whip up for a surprise breakfast in bed because what mom doesn't like that, right?! My Mother-in-law made this Blueberry Cream Cheese Strudel when she came out for a visit after Emily was born. I've made it several times since then, and it is always a hit.
Flaky puff pastry filled the sweet cream cheese and blueberries.

I just wanted to let you know that we made this a few days ago. Even though we accidently left out the egg causing it be way too runny, it was absolutely delicious! I plan to make it again for company on Saturday...and this time we'll try it with the egg (hopefully). :-)
