Blueberry Cream Cheese Coffee Cake

Hello! Thank you for stopping by for a visit and your advice on my new contacts. My appointment went well and it wasn't as hard as I thought it would be. They said I couldn't leave the store until I put them in/took them out three times in a row and since I don't like to waste time, I figured it out in about 15 minutes! We'll see if I still remember in the morning!

Blueberry cake
Today I would like to share a recipe for Blueberry Cream Cheese Coffee Cake. If you have blueberries in your freezer, or can get them on sale like they are here in Texas, then you should try this cake!

Blueberry Cream Cheese Coffee Cake

1/2 cup butter, softened
1 cup sugar
2 eggs
1 tsp. vanilla
1/2 cup milk
2 cups all-purpose flour, divided
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
8 oz. cream cheese, chilled
1 cup fresh or frozen blueberries

Topping:
1/2 cup brown sugar
1 tsp. cinnamon
1/2 cup flour
3 tablespoons butter, cut into cubes

Preheat oven to 350F. Cream butter and sugar in large mixing bowl. Add eggs, vanilla and milk. In a separate bowl, combine 1 3/4 cups of the flour, baking powder, baking soda and salt. Add to butter mixture and blend well.

Cut cream cheese into small cubes. Set aside. Combine blueberries and remaining 1/4 cup flour in small bowl. Add blueberries, along with the cream cheese cubes to cake batter and gently fold in. Spread in a greased 9 x 13 pan.

Topping: Mix brown sugar, cinnamon and flour together in small bowl. With a pastry blender, two knives or your fingers blend in butter until crumbly. Sprinkle over cake. Bake for 30-35 minutes or until toothpick comes out clean.

    Hi Kelli! This really sounds good. I am having overnight company on Sunday so maybe I will try this for Monday AM breakfast. I, also, thought about Krispy Kremes for breakfast...a favorite of my guest.

  3. That looks fabulous. I want to try it as soon as I get some more cream cheese and blueberries! I hope you enjoy your new lenses. I have had mine since I was 11 years old (my vision is terrible). I can't imagine life without them!

    The recipe looks great. I remember my trying to learn to put in contacts, ouch. It was difficult for me, yet so easy for most people. I ended up not continuing for I couldn't see well enough; I wear bifocals and my Dr couldn't fit me well in contacts. Sigh. I am doomed for glasses.

  10. Oh I wish I had some of that with the coffee I'm drinking now!! I have a good many blue berries in the freezer from the summer. You think black berries would work too?

    Wish you luck on the contacts...Im jealous! I couldnt ever wear them b/c my eyes are to dry from allergies. Drops didnt help either...oh but they are soooo nice!!

  15. Looks delicious...I am going to have to try that.. My kids are for anything blueberry.lol

    On the contacts...I wore them when i was younger and then with babies, just wore glasses for years. I got contacts again this last year and it took me about a week to remember that they have a "123" on them that tell you whether they are inside out or not...lots of days of trying to figure out why they were so uncomfortable.lol.. But now that I have it figured out, I love them. When I do have to wear my glasses, they give me a headache if I wear them very long. I hope you enjoy your contacts.

    Glad to hear you and your new contacts are friends. I recall my first encounter ... the tech stood watching, obviously impatient as I fumbled ... she informed me that a Downs' boy had done it the day before in half the time. Talk about being embarrassed!

    Recipe is great. I would do it a little differently, though. Instead of mixing the cream cheese and blueberries with the batter, I would layer the cream cheese over the dough and sprinkle the blueberries over and between the cream cheese cubes. Then I would sprinkle the topping over that. This same idea can be used for any muffin recipe. I sweeten the cream cheese for the blueberries first. Blackberries and even strawberries work just as well. I have used these fruits too.

    sounds yummy!

    I have been wearing one contact for many years now. I am near sighted so I don't need glasses to read. I wear the contact for distance in my right eye and read with my left. I hope you enjoy the contacts. It is better than having to put glasses on all the time and keep up with them when you aren't wearing them.

  41. It's safe to say I have started a new work out schedule to balance my prego weight and post prego weight but... Now, I don't know after seeing this post and recipe. YUMMY! How can anyone not try it and eat all of it in a single moment. It looks so good. At least to me. :)

    Huckleberries can be used too. Also raspberries are fabulous. Same for muffins with cream cheese and the fruits. I also used drained pineapple chunks that I cut into smaller pieces.
