Lemon Cream Cupcakes

Hello everyone! This past Friday we had Revee and her girls over for a visit to celebrate Emily's birthday. I had a bunch of lemons to use up so I made these Lemon Cream Cupcakes.


Lemon Cream Cupcakes
1 cup butter or margarine, softened
2 cups sugar
3 eggs
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sour cream

In a mixing bowl, cream butter and sugar. Beat in eggs, one at a time. Add lemon peel and vanilla; mix well. Combine dry ingredients; add to creamed mixture alternately with sour cream (batter will be thick). Fill greased or paper-lined muffin cups with 1/4 cup of batter. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove to wire racks to cool completely.

Lemon Cream Cheese Frosting
4 ounces cream cheese
1/4 cup butter, softened
1 cup confectioners' sugar
2 tablespoons lemon juice
2 1/4 cups confectioners' sugar
4 drops yellow food coloring

Beat cream cheese and butter in a bowl until combined. Beat in powdered sugar and lemon juice.
Beat in 2-1/4 to 2-1/2 cups more of powdered sugar till frosting is of spreading consistency. Stir in a few drops of yellow food coloring.
Note: I added a bit more lemon juice to make it extra lemony. If you do this, just add a little more powdered sugar too.

We had them with a scoop of vanilla ice cream too. :0)


More lemons to use up...


You can add sliced strawberries to your lemonade for an extra treat. Let it sit for about an hour and then stir.


Last night we watched the long awaited Miss Potter. I know some of you haven't seen it yet so I won't give anything away. I will just say that I loved it and so did the girls and Benjamin!

  4. What a wonderful treat! You are one of the few women I know who use real lemons for things! :-) You even started me on it!

    So~that movie is out on DVD now? FINALLY. Ever since it was at the theaters I have wanted to see it, but theaters are not for this time of my life...and whenever I asked about it at the movie store, only blank stares were offered!

    i can't wait to see it...I have a feeling I might want a copy of it for myself! :-)

    I LOVE cream cheese frosting.I can't think of a better treat to put it on than your lemon cupcakes. So delicious.

    And the lemonade looks so fresh and thirst quenching. What a lovely treat all around.

    I've not heard of the movie. Perhaps it is because I do not have small kids anymore? I'll hvave to look it up.

    I have missed being a part of your Show and Tell these last 2 weeks. The blogging is just getting to be so addictive that I have had to force myself to hold back from time to time.

  6. Those cupcakes look so good! Lemon is one of our favorite flavors. Summer has been making homemade lemonaid this year and this it is the best. Lemons just seem so summery to me.

    Those lemon cream cupcakes look absolutely delish! Lemon is one of our very favorites here. Sorry I haven't done Show N Tell lately, but I'm trying to find "my happy medium" I still want to do it from time to time, but have had to cut back some for summer.

  10. I am a big fan of anything lemony so I am printing this out to try soon! They look so good - thank you for sharing! I have some lemon curd that might make a nice filling for the middle - I had thought of donuts, but cupcakes would be even nicer!

    We often put raspberries in lemonade, and even sliced peaches when they are coming on nicely!

  11. We also loved this movie! We watched it a few nights ago and were thrilled! It was very nice to watch a movie that was clean and most of all, meaningful. The only thing missing was those cupckaes!

    Strawberry and lemon-topped lemonade is perfect with it!

  19. I can't remember when I've had a home-made cupcake from scratch and these sound positively yummy, and they look that way as well.

    Thanks for the movie tip. I like to see good movies and have found some that I check out from the library or get a Blockbuster are not exactly what I would have chosen had I known a little more about them.

  33. Upon your recomendation of this movie - I went and tried to rent it for the weekend. I was disappointed to find out that it was not yet released in our area yet. I told my hubbie how dissapointed I was - the next day after work he went and found me a copy and suprised me with it. We watched and had a wonderful weekend together. The movie was great - I loved it!!

    My husband, my two girls and I watched Miss Potter the other night and loved it too, even though a couple of us shed a few tears! It's so great to watch movies like that where you don't have to worry about the language or the content. My husband wants to buy it now.
