Zucchini Chocolate Muffins

What happens when you take shredded zucchini...


...and combine it with chocolate?


You get these Chocolate Zucchini Muffins!


My friend, Deb at Homespun Living recently shared the recipe and I have already made them several times!

Chocolate Zucchini Muffins
(adapted from a recipe in British Country Living magazine)

6 oz dark chocolate (70%) ( I used 1 cup of semi-sweet chocolate chips)
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cup sugar
1/2 cup dried cherries, chopped (I substituted chocolate chips)
1 cup finely grated zucchini
2 medium eggs
3/4 cup vegetable oil

Melt chocolate in double boiler~keep warm. Whisk together eggs and oil; blend in the melted chocolate; add the grated zucchini. Sift together the flour, baking powder, and baking soda; add the sugar and the dried cherries. Combine wet and dry ingredients. Pour into 12 prepared muffin cups. Bake at 350 degrees F. for 25 - 30 minutes, until risen and skewer comes out clean.

The zucchini seems to melt away and all is left is a rich, moist, brownie like muffin.

  1. I saw this recipe and thought about trying it. I was concerned about the dried cherries. You, my friend, are a genius for substituting choclate chips!

  2. Yummy!!! I've had zucchini cake before and you can't tell there is zucchini, with chocolate it must be even better!

  3. Mmm ~ those look delicious and moist. I, too, like the chocolate chip idea. I've found my family does not care so much for the texture of dried cherries in muffins. And since they are a bit on the expensive side, it's just not worth it for the Deputy's. ;o) But chocolate chips ... we like!

    Try it with a dark bing cherry instead of the dried. Not expensive and you have a black forest cake to die for.
