Gingerbread Cupcakes
Thank you to all who joined in for show and tell and for your comments on my special Autumn treasures! We've had a busy Saturday, but are about to relax and celebrate the upcoming first day of fall. It's been our tradition to watch Anne of Green Gables, and I made some Gingerbread cupcakes for our snack.
~Gingerbread Cupcakes~
5 tablespoons butter, softened
3/4 cup white sugar
1/2 cup molasses
2 eggs
1/2 cup milk
1 1/2 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1 teaspoon baking soda
1/4 teaspoon salt
Directions:
1. Preheat the oven to 350 degrees F. Grease or line a 12-cup muffin tin with cupcake papers.
2. Cream the butter and sugar together in large mixing bowl. Add molasses, eggs and milk and blend well.
3. Sift together the flour, spices, baking soda and salt.
4. Add the flour mixture to the creamed mixture and stir until just combined.
5. Pour the batter evenly into the prepared tin.
6. Bake at 350 degrees 18-20 minutes. Remove cupcakes to cooling rack. Frost when completely cooled.
~Lemon Cream Cheese Frosting~
2 tablespoons butter, softened
2 tablespoons cream cheese, softened
1 1/2 cup confectioners' sugar
1-2 tablespoons lemon juice
Cream butter and cream cheese together. Beat in the confectioners' sugar and lemon juice until fluffy.

Watching a certain movie or eating a certain food on the same day every year makes the very best memories of childhood!
I was wondering if you had heard of "The Anne of Green Gables Cookbook" by Kate MacDonald? I checked it out at our library last week. I've had the Little House cookbook for some time, but never knew there was a Green Gables one.

A girl after my own heart! No my grandchildren's, I bought the Little Debbie gingerbread cookies for them this week, I want to learn to make them again. But cupcakes I have to try these!!!!

ReplyDeleteYour cupcakes look so delicious! Never thought of making gingerbread as cupcakes. One of my favorite lines in "Anne..." is Marilla's "twenty pounds of brown sugar." I have the dvds and enjoy them with my 17 yr. old daughter.

How wonderful that you watch Anne of Green Gables yearly. I do hope you have the Public Television version.
I find the actual book to be too "treacly" but the tv series was wonderful and I love spunky Anne.
What a fun tradition! I love Anne of Green Gables - the Megan Follows films (the first two!) as well as the books. The cupcakes look very yummy - I'll have to remember this recipe. Thanks for sharing!

I love gingerbread cake. It's one of my favorite winter desserts. We like to eat it a little warm with real whipped cream. But I'm gonna try your recipe and that frosting. It sounds yummy. Mimi

ReplyDeleteKelli - Me again. I just noticed in the first picture next to your cake plate are some white leaves with pumpkin colored candles. What is in the dish around the candles? Cranberries? Real or Faux? BTW - I love your pear jelly. I think they should be in every shot. I especially love the labels.

ReplyDeleteI made these tonight.. very tasty! I love the combo of the ginger bread and the frosting. Here is a funny... when making the frosting, I didn't use icing sugar.. I used regular white sugar - oops! I hated to dump it but had no choice. It was quick to make another batch.
