Fluffy Pancakes
I'm not a morning person, so we like to have pancakes for lunch during the colder months. It's one of my favorite things about winter!
ETA: Here's the recipe!
Fluffy Pancakes
1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup milk
2 tablespoons vegetable oil
In a mixing bowl stir together flour, sugar, baking powder, and salt. In another bowl combine egg, milk and oil. Add to flour mixture all at once. Stir mixture just until blended but still slightly lumpy. Pour about 1/4 cup batter onto a hot, lightly greased griddle.
Cook till pancakes are golden brown, turning to cook second sides when pancakes have bubbly surfaces. Makes 8-10 pancakes.
These look wonderful Kelli! I love pancakes, and so do the kids. I just wish hubby liked them more.
ReplyDeleteThose look pretty good and I have to say I do the same thing. There are times when my hubbs goes out of town on golf tournaments and those are the days the kids and I have French Toast for dinner, lol!

I like this idea. We used to have pancakes for dinner growing up, but I tried it with my children and they were not too impressed…perhaps they were not hungry enough.

If we announce having pancakes for dinner the kiddos go wild. Honestly my hubby makes good pancakes and I make great puffy oven ones.

ReplyDeleteWe just had pancakes last night for dinner. It is usually what we have when I have a busy day and didn't have time to take something out of the freezer. We cook enough to put in the toaster the next morning. Crispy on the outside and fluffy on the inside :)
