Camping and Banana Muffins
Good morning! We survived our camping trip. :0) You can't tell from the pictures, but it was *very* windy and was on the edge of raining the whole weekend.
It did rain a little on Saturday night, but we slept through it.
We had a fun time visiting with friends and there was a playground and lake for swimming.
Even Daisy went swimming.
My favorite part of camping is always the extra time to sit back and relax.
The French press coffee.
And roasted marshmallows!
We are finally getting that rain and are moving slowly this morning. We have lots to do...school work, laundry, dishes, and maybe a little baking. Speaking of baking, I made some banana muffins last week. Here is the recipe...
Banana Muffins
1 3/4 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1/2 cup milk
1/4 cup oil or melted butter
3/4 cup mashed banana
In a mixing bowl, combine flour, sugar, baking powder, and salt. In a separate bowl, combine the egg, milk, oil and banana. Add to flour mixture and stir just till moistened. Lightly grease muffin cups and fill 2/3 full. Bake in a 400F oven for 15-20 minutes or until golden. Remove from pans; serve warm. Makes 10-12.
Thank you for stopping by for a visit and have a wonderful start to your week!
Hello Kelli! I am glad that you are home and that your trip stayed mostly dry. I bet you do have a lot to do today. Mondays always seem so busy.
ReplyDeleteI hope you and the rest of the family have a week full of many blessings. Love, Debbi
I am jealous Kelli! We want to go camping but still snowy in the mountains, and in my pregnant state, I'm not going to be able to help as much.
ReplyDeleteWe are definitely going to try to get a few early trips in, before I'm too far along to go.
Oh what a fun time! We have always camped as far back as we go together. Now we RV. But hey - same thing - kinda. OUTDOORS! In the forests and by the lakes and in the snow! I love it all. The sites, the smells, the luxury of just relaxing.
ReplyDeleteWonderful post. What a great way to begin the week. We are going for 3 days this coming weekend and I can't wait!
Thanks. HAGD! Karen
I am not a camper at heart, but there are things I miss about the camping trips we used to take.
ReplyDeletewow, spring camping, you guys are brave ;) I remember how cold it can get during this time when camping!

ReplyDeleteLoved the pictures! Oh camping in stormy weather is great fun! Nothing better than a little mud to make the world a better place!
ReplyDeleteThose muffins look delicious!
kelli,
ReplyDeleteIt looks like you had fun. Have you ever been camping at Lake Arbuckle? Very beautiful! I think it is about 2 hours from you.
Daisy looks so sweet!
Love, Heather
It looks like a great time - especially the sitting back and relaxing part! We camped at Lake Benbrook near Ft. Worth for Spring Break when our kids were little, but it's been a long time. Your pictures reminded me of our camping trip.
ReplyDeleteWhat fun and what a sweetie puppy

I love camping!! I am so jealous!!
ReplyDeleteI love camping and I haven't been for so long, note to self, talk to husband tonight about camping soon. Love the recipe, can't wait to try it.
ReplyDeletePhotos are not showing. wah!
ReplyDeleteToo cold ot camp here still but we will go on July. Funny how there is "time to relax" when you have to set up your house, cook on a portable stove or over a fire, and walk half a mile to use the bathroom. Personally I think it's bc there's no tv and no computer!
Mmmm... I want a muffin right now!
ReplyDeleteOh, this looks like so much fun. And those marshmallows just look yummy!! Toasted to perfection:)
ReplyDeleteThanks for sharing your weekend with us. We had downpouring rain almost all weekend.

ReplyDeleteHi Kelli!
ReplyDeleteYour camping trip sounds great! We need to head out and open up our camp for the year, but the weather just hasn't been camping friendly yet.
The relaxing is my favorite part too!
Blessings,
Lisa
Hey, Kelli! Glad your camping didn't get rained out. May I please publish your pic of roasted marshmallows on my blog, "Picture Camping..."? I'll give you credit for it, of course! (www.rjnbenterprises.blogspot.com, if you'd like to check it out.)
