Caribbean Jerk Chicken Salad

Salad
We enjoyed a delicious new salad last night for dinner. The best part is that you can use any kind of lettuce, veggies, spices, and salad dressing that you like!

Salad
Romaine, green onions, and red and green peppers.

Salad Dressing
I tossed the salad with Creamy Italian Garlic dressing and seasoned small pieces of chicken with Caribbean Jerk seasoning, as it cooked in a skillet.

Chicken

Croutons
When the chicken was done, I removed it from the pan and heated up some croutons for a few minutes.

Salad
Top the salad with the croutons and chicken. Enjoy!

  11. I bet it was tasty! I do this with chicken too but I season it with Tony Chachere's cajun spice and then add a delicious homemade caesar dressing.

  13. Sounds wonderful ~ I never tried Caribbean Jack seasoning. It's on my shopping list now.
    Our Thursday nights are so crazy ~ this will perfect for tomorrow's dinner!

  15. mmmm... I love chicken in my salad and this looks and sounds yummy!

    Last night we had rotisserie chicken picked up at the grocery store and a green salad with ranch dressing- so nice not to heat up the kitchen in this hot weather:)

  28. It's a perfect summertime meal. I like that you cut up the chicken is pieces as you did and I can imagine that the cajun spice kicked it up a few notches. Great! The croutons were a crispy add on. Very good. I'll have to give it a stab. Big jug of iced tea with lemon sounds great with the meal.

    I made this this week and it was a hit! The cool creaminess of the dressing and the chunks of cucumber I added to my salad seemed to tame the flame a bit. Very good! ~Kelly in MN
