Con Pollo Pasta
One of Grace's goals for the new year is to help out more in the kitchen, especially when it comes to making dinner. I recently found a recipe for Con Pollo Pasta from my friend Kathi, at Feathering My Nest and thought it would be perfect for a cooking lesson.
Chicken, garlic, tomatoes, mushrooms and peas over fettucini.
Grace made most of the dish by herself!
We set the table while the noodles cooked.
Grace put the fettucini on a platter and poured the chicken sauce on top.
Con Pollo Pasta
1 package cooked long pasta
4 boneless chicken breasts, cut to bite size pieces
Brown chicken in olive oil over medium high heat, about 8 minutes.
Add:
4 chopped green onions
2 tsp. minced garlic
6 sliced mushrooms
1/4 Cup Chardonnay or other white wine (optional)
1 can diced tomatoes
Keep stirring and lower heat to medium low.
Add:
2 tablespoons dried or fresh basil
2 tablespoons Parmesan cheese
1 cup frozen peas
About 3/4 cup of the pasta water to thicken sauce
Allow sauce to thicken. Pour sauce over pasta.

Serve with extra parmesan, a fresh salad and french bread!
Mmmm...that looks good! I'll have to try this recipe sometime. And even more impressing is how good the food looks in the pictures. It seems like photos of food often look kind of... gross... but your doesn't.

ReplyDeleteAnd thanks for the hot tip on the glass canisters... I found some at Target this morning for under $5 apiece, which I thought was a pretty good price given the prices for most canister sets!

Oh, and I did not get the bird thing--I stopped bidding at 20 dollars.!! The person got it fot 20.50 plus there would be 6 dollars shipping!!! Thanks---

ReplyDeleteI saw it too and it looked yummy. Your photo's bring back memories. When my daughter was homeschooled in 10th grade she cooked at least one meal a week. I have some wonderful photo's from those times. One meal I remember was fried okra. We were in Colo. at the time! Cost a fortunate but it was worth it. Your table looked beautiful too. Enjoy this special time. You Bless me by bringing back special memories for me.
