Camping and Banana Muffins

Lake
Good morning! We survived our camping trip. :0) You can't tell from the pictures, but it was *very* windy and was on the edge of raining the whole weekend.

Sky
It did rain a little on Saturday night, but we slept through it.

Lake
We had a fun time visiting with friends and there was a playground and lake for swimming.

Daisy
Even Daisy went swimming.

Emily
My favorite part of camping is always the extra time to sit back and relax.

Coffee
The French press coffee.

Marshmallows
And roasted marshmallows!

We are finally getting that rain and are moving slowly this morning. We have lots to do...school work, laundry, dishes, and maybe a little baking. Speaking of baking, I made some banana muffins last week. Here is the recipe...

Banana muffins

Banana Muffins

1 3/4 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1/2 cup milk
1/4 cup oil or melted butter
3/4 cup mashed banana

In a mixing bowl, combine flour, sugar, baking powder, and salt. In a separate bowl, combine the egg, milk, oil and banana. Add to flour mixture and stir just till moistened. Lightly grease muffin cups and fill 2/3 full. Bake in a 400F oven for 15-20 minutes or until golden. Remove from pans; serve warm. Makes 10-12.

I am jealous Kelli! We want to go camping but still snowy in the mountains, and in my pregnant state, I'm not going to be able to help as much.

We are definitely going to try to get a few early trips in, before I'm too far along to go.

Oh what a fun time! We have always camped as far back as we go together. Now we RV. But hey - same thing - kinda. OUTDOORS! In the forests and by the lakes and in the snow! I love it all. The sites, the smells, the luxury of just relaxing.
Wonderful post. What a great way to begin the week. We are going for 3 days this coming weekend and I can't wait!

It looks like a great time - especially the sitting back and relaxing part! We camped at Lake Benbrook near Ft. Worth for Spring Break when our kids were little, but it's been a long time. Your pictures reminded me of our camping trip.

Photos are not showing. wah!

Too cold ot camp here still but we will go on July. Funny how there is "time to relax" when you have to set up your house, cook on a portable stove or over a fire, and walk half a mile to use the bathroom. Personally I think it's bc there's no tv and no computer!

Your camping trip sounds great! We need to head out and open up our camp for the year, but the weather just hasn't been camping friendly yet.
