Con Pollo Pasta

Grace
One of Grace's goals for the new year is to help out more in the kitchen, especially when it comes to making dinner. I recently found a recipe for Con Pollo Pasta from my friend Kathi, at Feathering My Nest and thought it would be perfect for a cooking lesson.

Pasta
Chicken, garlic, tomatoes, mushrooms and peas over fettucini.

Grace
Grace made most of the dish by herself!

Table
We set the table while the noodles cooked.

Pasta
Grace put the fettucini on a platter and poured the chicken sauce on top.

Con Pollo Pasta

1 package cooked long pasta
4 boneless chicken breasts, cut to bite size pieces

Brown chicken in olive oil over medium high heat, about 8 minutes.

Add:

4 chopped green onions

2 tsp. minced garlic

6 sliced mushrooms

1/4 Cup Chardonnay or other white wine (optional)

1 can diced tomatoes

Keep stirring and lower heat to medium low.

Add:

2 tablespoons dried or fresh basil

2 tablespoons Parmesan cheese

1 cup frozen peas

About 3/4 cup of the pasta water to thicken sauce

Allow sauce to thicken. Pour sauce over pasta.

(Recipe shared with permission)
Pasta
Serve with extra parmesan, a fresh salad and french bread!

Mmmm...that looks good! I'll have to try this recipe sometime. And even more impressing is how good the food looks in the pictures. It seems like photos of food often look kind of... gross... but your doesn't.

Thanks for sharing!

That looks very good! And so colorful, too.

And thanks for the hot tip on the glass canisters... I found some at Target this morning for under $5 apiece, which I thought was a pretty good price given the prices for most canister sets!

I love that she has that set for her goal! I guess my kiddos are a little too young to set goals - but your post has impressed that upon me and I want to do that with them!

Just looks delicious, great job, Grace! I will have to try that for a fancy recipe for me.
I put a link to your Cappuccino Chocolate Muffins on a post. Maybe because I am supposed to be on a low fat diet. :)

You are so fortunate to have the company of such a sweet helper. It looks like she is going to be every bit as good at cooking as you are, Kelli.

wow, great looking--I will have to try this one. We are off of pasta for a bit , but strangely enough we find some dishes go extremely well with lentils. Oh, and I did not get the bird thing--I stopped bidding at 20 dollars.!! The person got it fot 20.50 plus there would be 6 dollars shipping!!! Thanks---

Yum! What a blessing for you to not have to cook, and a wonderful skill for Grace to learn!

Not too much longer and Kaia will be kicking me out of the kitchen. She would like to now, but all she can make by herself is a mess.

I saw it too and it looked yummy. Your photo's bring back memories. When my daughter was homeschooled in 10th grade she cooked at least one meal a week. I have some wonderful photo's from those times. One meal I remember was fried okra. We were in Colo. at the time! Cost a fortunate but it was worth it. Your table looked beautiful too. Enjoy this special time. You Bless me by bringing back special memories for me.
