Sour Cream Chicken Enchiladas

IMG_0038.JPG.jpeg

Sour Cream Chicken Enchiladas

3 cups cooked and shredded chicken
1 1/2 cups sour cream
1 (10 ounce) can enchilada sauce
1/2 cup salsa
1 (7 ounce) can chopped green chiles
1/2 cup cilantro
2 cups shredded Cheddar cheese
12 (6 inch) flour tortillas

Preheat oven to 350 degrees F (175 degrees C).

1. Mix sour cream, enchilada sauce, salsa, green chiles, and cilantro together in bowl. Set aside.

2. In separate bowl, mix shredded chicken, 1 cup of the sour cream mixture, and 1 cup of the shredded cheese. I also seasoned with salt, pepper, chili powder, and a little cumin.

3. Heat tortillas in microwave oven until soft. Pour enough of the sour cream mixture into a 9x13 inch baking dish to coat bottom.

3. Place 2 heaping tablespoonfuls of the chicken mixture in each tortilla, roll up and place seam side down in the baking dish. Pour remaining sour cream mixture on top and sprinkle with remaining shredded cheese.

4. Cover with aluminum foil and bake for about 30 minutes, or until heated through and bubbling.

Tonight, we enjoyed this new recipe for dinner. It was easy to put together and was out of the oven is 30 minutes. Let me know if you try it!

Yummy, Kelli! I have a recipe similar to this and it is a favorite of my husband's and everyone else I have made them for. All of your readers need to for sure try this one.

A hint.....I have made them ahead of time and freeze them to use later. Bake them after you take them out of the freezer.

Love, Debbi

This looks so good. I want to try it. I can't get cilantro where I live. Do you know of a good substitute or would be o.k. to leave it out?

Hi Senkyoushi,
You could leave out the cilantro and add parsley for a little color.

There's a good chance I will try it. My family loves Tex-Mex style cooking. Me? I'm just lukewarm, but they out-number me....so at least once a week, it's tacos, or enchiladas or burritos. Nacho chips and salsa is also a favorite snack around here. With all males, they prefer savory-salty snacks, while I prefer sweets.
Ah, well, vive la difference!

Oh my, this looks so tasty! I am happy to see that the recipe uses flour tortillas; there is just something I cannot get past about corn tortillas! I just may have to try this out on my fiancee next week.

I need to try this soon. I tried the Pioneer Woman's enchilada recipe and it was a tad too spicy for us. This looks terrific. Blessings!
