Hello! Thank you for stopping by for a visit and your advice on my new contacts. My appointment went well and it wasn't as hard as I thought it would be. They said I couldn't leave the store until I put them in/took them out three times in a row and since I don't like to waste time, I figured it out in about 15 minutes! We'll see if I still remember in the morning!
Today I would like to share a recipe for Blueberry Cream Cheese Coffee Cake. If you have blueberries in your freezer, or can get them on sale like they are here in Texas, then you should try this cake!
Blueberry Cream Cheese Coffee Cake
1/2 cup butter, softened
1 cup sugar
1 tsp. vanilla
1/2 cup milk
2 cups all-purpose flour, divided
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
8 oz. cream cheese, chilled
1 cup fresh or frozen blueberries
1/2 cup brown sugar
1 tsp. cinnamon
1/2 cup flour
3 tablespoons butter, cut into cubes
Preheat oven to 350F. Cream butter and sugar in large mixing bowl. Add eggs, vanilla and milk. In a separate bowl, combine 1 3/4 cups of the flour, baking powder, baking soda and salt. Add to butter mixture and blend well.
Cut cream cheese into small cubes. Set aside. Combine blueberries and remaining 1/4 cup flour in small bowl. Add blueberries, along with the cream cheese cubes to cake batter and gently fold in. Spread in a greased 9 x 13 pan.
Topping: Mix brown sugar, cinnamon and flour together in small bowl. With a pastry blender, two knives or your fingers blend in butter until crumbly. Sprinkle over cake. Bake for 30-35 minutes or until toothpick comes out clean.
Let me know if you try it!
Hi Kelli! This really sounds good. I am having overnight company on Sunday so maybe I will try this for Monday AM breakfast. I, also, thought about Krispy Kremes for breakfast...a favorite of my guest.
You are so funny! I giggled when you said you don't like to waste time so you figured out how to put your contacts in fast. HE! HE! HE!
Hope the little kiddles get well soon. You stay well too, Love, Debbi
Ooohh, this sounds wonderful. My two year old absolutely adores blueberries. I will have to try the recipe. Your blog is beautiful. Very inspiring. You make beautiful scrapbooking crafts!
That looks fabulous. I want to try it as soon as I get some more cream cheese and blueberries! I hope you enjoy your new lenses. I have had mine since I was 11 years old (my vision is terrible). I can't imagine life without them!
This looks really good. I'll add it to my collection of recipes to try and make it when I get some fresh blueberry's out of my garden. Thanks for sharing!
This looks so good. I love cream cheese and blueberries.
Hi Kelly, this recipe looks wonderful, and I have some blueberries in my refrigerator right now, so I think I'm going to have to try it!
This looks and sounds DELICIOUS!!! I think I may make it this weekend! Can't wait to try it!!
The recipe looks great. I remember my trying to learn to put in contacts, ouch. It was difficult for me, yet so easy for most people. I ended up not continuing for I couldn't see well enough; I wear bifocals and my Dr couldn't fit me well in contacts. Sigh. I am doomed for glasses.
This sounds so good. My husband LOVES blueberries, so I know he will really like this. Thanks for sharing the recipe!
Oh I wish I had some of that with the coffee I'm drinking now!! I have a good many blue berries in the freezer from the summer. You think black berries would work too?
Wish you luck on the contacts...Im jealous! I couldnt ever wear them b/c my eyes are to dry from allergies. Drops didnt help either...oh but they are soooo nice!!
Kelli this is for Debbi......get a blog so we can hear more from you!! Anyone who wants to serve Krispy Kremes to their guests is a winner in my book & NEEDS A BLOG!!!! Come on Debbi...you can do it!! Blog them Krispy Kremes!!
Darn I wish I had a dozen! LOL!!
I have been looking for a new recipe to use some of the blueberries I have left in the freezer. Thanks for sharing it.
Boy that looks delicious! Thanks for sharing. I hope you are having a terrific week!
Hi Kelly! This coffeecake sounds great, I will have to try it! Thanks for sharing.
*~Petals and Pine~*
Looks delicious...I am going to have to try that.. My kids are for anything blueberry.lol
On the contacts...I wore them when i was younger and then with babies, just wore glasses for years. I got contacts again this last year and it took me about a week to remember that they have a "123" on them that tell you whether they are inside out or not...lots of days of trying to figure out why they were so uncomfortable.lol.. But now that I have it figured out, I love them. When I do have to wear my glasses, they give me a headache if I wear them very long. I hope you enjoy your contacts.
Oh, this looks so yummy! ... and the directions seem like something even I could follow without ruin! (LOL).
Glad to hear you and your new contacts are friends. I recall my first encounter ... the tech stood watching, obviously impatient as I fumbled ... she informed me that a Downs' boy had done it the day before in half the time. Talk about being embarrassed!
Sending warm wishes to you ALL for a great day!
Recipe is great. I would do it a little differently, though. Instead of mixing the cream cheese and blueberries with the batter, I would layer the cream cheese over the dough and sprinkle the blueberries over and between the cream cheese cubes. Then I would sprinkle the topping over that. This same idea can be used for any muffin recipe. I sweeten the cream cheese for the blueberries first. Blackberries and even strawberries work just as well. I have used these fruits too.
Man....that sounds good!!!! I like the idea of cubes of cream cheese.
Glad you figured out those contacts so quickly.
It looks delicious and I will have to try it! :)
Seriously, dreaming of eating this right at this very moment. :)
That looks yummy and I just love Blueberries. Thanks
That looks so very delicious !!! I can imagine it will taste really yummy too.
This looks absolutely sinful!!! Here I'm trying to cut down on recipes and you are tempting me with a new one...
Your recepie looks good! I like the name of your blog, too. We homeschool, too.
Have a good day!
I was going to ask if you could use blackberries instead of blueberries, anonymous has already answered my question. I have blackberries in my freezer from Janet, at Writing in The Blackberry Patch.
Sorry, I don't know how to do the link.
Just popping in to say that cake looks delicious and your Anne of Green Gables doll is sweet.
Blueberries and brown sugar sound like perfection to me. :) Thank you for sharing the recipe!
This sounds delicious! I have blueberries in the freezer, too, along with my blackberries. I just made blueberry pancakes this morning.
This sounds delicious! I was looking for something for tomorrow night, so I think I'm going to try this.
These look delicious, Kelli! Thanks for sharing the recipe.
Mmmm...I DO have blueberries in the freezer! I just might make this today. Thanks!
Wonder if I can use Huckleberries in this? I will have to make this...thanks for sharing. Hope all is well with you and your family. =O)
Yum, yum! Oh, but you have tempted me! Today is only the first day of Lent and already I'm missing my baked goodies :) Maybe I'll try this for Sunday morning when we get to break fast for the week!
Kelli, it looks gorgeous and sounds so yummy. I can't wait to try it. I just love blueberries. Thanks for the great recipe. Hugs, Marty
Yum! this looks delicious!
I didn't get to comment earlier but I know you will love the contacts especially if you can sleep in them. I love them. Can't afford them right now but I had absolutely no prob.
Good luck. Cake sounds good I might have to try. I actually have all the ingredients!
Have a great Thurs. I won't be able to join in this week but hopefully soon.
I have been wearing one contact for many years now. I am near sighted so I don't need glasses to read. I wear the contact for distance in my right eye and read with my left. I hope you enjoy the contacts. It is better than having to put glasses on all the time and keep up with them when you aren't wearing them.
Ooohhhh...this looks SO yummy, and yes, I actually DO have blueberries in my freezer, Kelli! :-) Thank you for sharing this delicious sounding recipe...I love anything with blueberries!
I have blueberries from last summer frozen. I may use this for my ladies
brunch coming up in March. Thank you.
This sounds positively delicious!
I really enjoy your blog!
Glad things went A-OK with the contacts! :)
It's safe to say I have started a new work out schedule to balance my prego weight and post prego weight but... Now, I don't know after seeing this post and recipe. YUMMY! How can anyone not try it and eat all of it in a single moment. It looks so good. At least to me. :)
I just made this coffee cake and it's wonderful.... thank you for sharing the recipe.
this looks wonderful. i'll be checking it out real soon :O).
and good luck with your contacts. i wore contacts for 25 years, then a couple years ago had the lasik surgery - no more glasses. yeah! i never had a problem with my contacts. hope yours go well for you :)
Huckleberries can be used too. Also raspberries are fabulous. Same for muffins with cream cheese and the fruits. I also used drained pineapple chunks that I cut into smaller pieces.
I made this recipe yesterday and it was a HIT! Very good and I love the pcs. of cream cheese in it. Thanks for posting the recipe; it's a keeper! I posted a picture of it on my blog and directed all that was interested to your blog for the recipe.
Thanks so much for sharing this recipe! Since you posted it, I have already made it twice. It is SO good! It is not often that everyone in my house likes the same thing at the same time, but this time it was a big hit with everyone. Thanks so much!
I made this and it was a big success! It was very easy to make and was delicious. It disappeared so fast!! I am going to make it again this week. Thanks for the recipe.
