Green Chile Chicken


I'm sorry I'm so late with Tuesday's Seasonal Delights weekly recipe! I came up with this recipe when I opened my pantry and it was pretty much empty. :0) I had a can of diced tomatoes and green chiles, plus chicken in the fridge. I added some spices and came up with Green Chile Chicken, which we've had once a week for the last month! Anyways, come over to Seasonal Delights for the recipe!

Yum - nothing beats chicken and gooey cheese in a tortilla - in my opinion!!

Me again. Just wanted to tell you that I ended up making this last night. It was a great dish! Thank you. I substituted fresh cilantro for the oregano since ours is growing quite well right now. I made enough to have leftovers tonight. I am going to serve the green chile chicken over rice and beans. This is be a great meal for a busy day of going to visit my grandparents. Thanks again.
