Ever since we have been married, we haven't had more than 30 minutes to ourselves ALL of Christmas weekend so I have never had to have a menu. I am jealous! I hope to SOMEDAY be able to celebrate Christmas at OUR house and not be running around a million places.

I said that when we had kids it would change-and then I had one. Then I said when we had more and they grew up a bit...and they have. Hmmmm.... Will it EVER happen?

Your dinner sounds great, but the actual dinner part seems a big short on side dishes - I'm looking in my big Christmas cookbook for some ideas.... let's see:
- baby carrots and green beans in herbed butter?
- red cabbage and apples with bacon?
- my family does an asparagus salad, which is sort of iffy.

Rebecca, we had to announce, "Christmas is at our house, you are welcome to come and join us." Most of our family has taken it very well. :0)

Beck, thank you for the side dish suggestions. What kind of herbs are in the butter? I love asparagus! That's a great idea!

Your menu sounds wonderful. :-) To round out the dinner part, I though of suggesting a marinated green bean salad my family enjoys. It is one of those recipes that we only have at Christmas time. It includes green beans, peas, bell pepper, celery, onions, pimentos, and a cider vinegar and oil marinande. It looks very festive and Christmas-y on your plate with all the green and the red pimentos. It is delicious with ham and an easy, make-ahead dish as well.

Kelli, the recipe calls for tarragon. The asparagus salad IS yummy, and it's found in the Joy of Cooking cookbook, if you're curious.

My thought is to add a green veggie with dinner. But I don't have any particular recipe for this, to share.

I would add some green beans. They always taste good with ham. I make mine with canned green beans (the cut kind, not the ones that say "no salt added") and bring them to a boil by adding a decent drizzle of oil and a good dose of sugar (yes, sugar), salt and pepper. Let them boil til the liquid has gone down a good bit, stirring every so often, then put to a simmer for several hours. These are delish-- I promise!

Kurt's family has Swedish Meatballs, gafunta fish (I can't spell it) and glugg with Christmas dinner (well, they do it on Christmas eve). It's a tradition for me to make potato casserole. Here's the recipe:

Your dinner sounds very similar to mine. With our ham, scalloped potatoes and rolls, we're having a mixed vegetable casserole, my mom's cherry pie jello (my kids would revolt if we didn't have this and I mean the GROWN kids!), and a spinach salad (with bacon crumbles, mandarin oranges, dried cranberries and chopped pecans) with a sweet oriental dressing.

I just realized that the menu doesn't include CORN! We can't have Christmas without CORN! What was I thinking? What were you thinking?

Sorry, corn at holiday feasts is tied up with childhood memories of living in the Philippines and British missionaries and stuff like that. I'm somewhat fanatical about it.

We have just about the same thing every year and it's almost all carbohydrate. With ham or turkey, we always have cornbread dressing, gravy, cranberry sauce, green beans, sweet potato casserole, and a gelatin salad. I have on occasion added potato salad, waldorf salad, macaronni and cheese, and chicken and dumplings. I had a 7 layer salad last year but it was barely touched. Your dinner so far sounds delicious!

Looks wonderful Kelli, I am with the others just add a green veggie for a side dish.
We usually have a big dinner Christmas Eve. First church then home to roast duck and all the trimmings. Christmas day is usually a spread of mostly munchies ~ veggies and dip, cheese and crackers and a Christmas punch.
This year will be different since we are spending Christmas at my sisters' house!

I'd be happy with what you've got planned. It all sounds yummy! Although, might I suggest a Sweet Patootie Souffle, for a vegetable dish? :) It's somewhere in the November Archives over at my place. I know I'll be making it for Christmas, if we get out of the snow and over to our family's.

We are light on the meat and heavy on the veggies at our house so our menu will include at least 5 veggies along with potatoes. My family likes Harvard Beets, and they are so colorful on the plate (dangerous for the tablecloth though!), steamed baby carrots, steamed broccoli and cauliflower with optional cheese sauce, and hubbard squash with bacon and real maple syrup for a treat. The veggies aren't fancy, but that's okay since we have more room for rich desserts. Too often we enrich the veggies to the point that they become like a dessert and loose their nutritional value. I like to keep it simple! Leaves more fat grams for 7 layer chocolate pie!

Obviously American Christmas Dinner is quite different to the traditional English one - we start with melon and grapefruit salad, then we have roast turkey with sausagemeat stuffing, roast potatoes, roasted parsnips, sprouts, cranberry sauce and gravy. Tradition dictates Christmas pudding with brandy butter or sauce for afterwards but these days I use the leftover desserts from our big Christmas Eve dinner - there are always three or four to choose from so they don't all get eaten on Christmas Eve. I'm sure it will all be wonderful whatever you do - Merry Christmas!
